This research demonstrates that phytochemical-rich extracts from fruits like grape, blueberry, blackcurrant, and beetroot possess significant antidiabetic potential by strongly inhibiting the carbohydrate-digesting enzyme α-glucosidase, thereby helping to manage postprandial blood glucose levels. The study found a clear link between high phenolic and anthocyanin content and enhanced enzyme inhibition, with grape showing the highest overall activity and blackcurrant and blueberry being particularly rich in anthocyanins. Combining extracts led to complex interactions, ranging from synergy to antagonism, while processing methods like drying reduced bioactivity. The findings highlight the promise of these natural extracts for functional food applications targeting type 2 diabetes, though further in vivo studies are needed to confirm their efficacy.
