Another busy week in Mexico City 🇲🇽

It's been a mix of project work, visiting other inspiring organisations and trying even more amazing food.

One of the highlights was visiting Las Sabinas, a feminist organisation that supports young girls and survivors of sexual violence. It was inspiring to learn about the important work they do and the positive impact they're having in their community.

We also travelled to Hagamos Composta in Xonacatlán, where another Laidlaw team has been working. We learned about the composting process, why it's so important for reducing waste, and even got the chance to plant a tree. It was a nice break from the city and a great opportunity to see another sustainability project in action.

Back with Rennueva, we built our first physical prototype of our proposed collection system. It was a simple model, but it really helped us bring our ideas to life and think through how the system would work in practice.

Away from the project, we celebrated Mila's birthday with a lovely dinner, which was such a fun evening with everyone.

And of course... more food! I went back to my favourite restaurant in Mexico City, KoKu. I know it's Japanese rather than Mexican, but I honestly couldn't resist. Their coconut curry ramen is still one of the best meals I've had here, and I finally tried their mochi ice cream too, which definitely lived up to the hype. I also discovered taro for the first time, a purple sweet potato and tried it as both a frozen yogurt flavour and an iced taro latte. Safe to say I'm a big fan!

Every week here brings something completely different, and I'm learning just as much outside the office as I am working on the project.
